Abstract

Two models for the promotion and development

of chocolate in regions with tourist use in Latin

America and Europe are analyzed: Mexico and

Spain. Through a qualitative approach based on

a comparative case study and the application of

ethnographic techniques, the parallels and differences

between the two were documented to

identify how gastronomic tourism is promoted and

developed in contexts with similar characteristics,

but also with strong contrasts that reveal differentiated

forms of tourist activation of resources and

their promotion.

Mariana Monserrat Sosa Tinoco, Univesity of Girona

Mariana Monserrat Sosa Tinoco. Age 28 years old. Originally from Ciudad Obreg.n, Sonora, M.xico. Researcher in training in the Intercultural Tourism program, in the line of community-based tourism by the University of Girona. Master in cultural tourism and professor at the Technological Institute of Sonora in the department of extension of culture and administrative sciences. Work experience in travel agencies such as Unitrips Europe and Enlaces Educanada.
